When Russell Stover gifted me their Sugar Free Baking Chips my mind immediately went to the classic chocolate chip cookies but I knew I wanted to do something a little bit different. When I thought of doing the cookie bars I wanted to make sure they were going to the nice and gooey! Bars always end up getting dried out so easily! A cookie bar recipe for when you want that perfectly moist cookie but you kinda want it in cake form too? You know what I'm talking about...a perfectly thick cookie cake! So that’s the recipe I threw together…

Gooey Cookie Bar Recipe

Ingredients

  • 6 tablespoons room temperature butter

  • 1/2 cup packed light brown sugar

  • 1/2 cup sugar

  • 2 large eggs

  • 1 teaspoon pure vanilla extract

  • 1 teaspoon cinnamon

  • 1/2 teaspoon nutmeg

  • 1/2 teaspoon salt

  • 3/4 cups all-purpose flour

  • 3/4 cups cake flour

  • 1/2 teaspoon baking soda

  • 1 bag of Russell Stover Sugar Free Dark Chocolate Baking Chips

Instructions

  1. Get everything ready! Gather your ingredients and make sure you have everything! Literally. the number of times I have started making something just to find out I’m out of sugar or don’t have enough eggs or something? Tragic.

  2. Preheat oven to 350°. Line an 8×8 baking dish with foil and spray with a cooking spray. (Why do you ask? especially if you are using a nonstick pan? This helps for the easy removal and allows for a better back while in the pan!)

  3. Using an electric mixer, go ahead and beat the butter, brown sugar, and granulated sugar together until fluffy. This should take you about 4-6 minutes. Give it time and don’t rush this process! This will help make the bars a bit fluffy in texture.

  4. Add the vanilla, cinnamon, nutmeg, and salt

  5. One mixed, go ahead and add the the eggs one at a time, while maxing sure to scrape down the sides of the bowl.

  6. Next, mix in flour and baking soda only until mixed completely. Don’t overmix.

  7. Leave a half cup of baking chips aside and mix in the rest!

  8. Pour it all into that lined and sprayed pan, sprinkle half of those chocolate chips on top and go ahead and push that baby in the oven for 30 minutes!

  9. When there is about 15ish minutes left? (you can tell by the top starting to settle and the chocolate chips on top are slowly starting to sink in) go ahead and sprinkle the rest of those baking chips on top!

  10. When the 30 minutes are up, pull it out and set it on a cooling rack (in the pan, very important!) to cool for about 15 minutes! After that, you can pull it out by the tin foil and have it cool in that. Cut it up into whatever shapes you would like and enjoy!
